These are the most amazing cookies. Refined sugar free, full of flavor, and super easy to make. If you are looking for a healthier alternative to store bought desserts, follow these easy step by step instructions and enjoy!
I have the strongest sweet tooth, and I love all things cinnamon raisin. I wanted to create something that would satisfy the cravings, without also giving me a huge guilt trip.
I also wanted to make something that my kids would love and provide them with a healthier option for those after dinner dessert requests. (Because let’s face it…there is always room for dessert.)
I decided to experiment with this recipe and it was a huge success! I made a couple of batches, making some minor changes, and I am happy to present you with the the final product!
These cookies have a very “scone like” consistency, which I have found makes them the perfect companion for my morning cup of coffee.
I am so excited for you to try them! Let’s gather the ingredients.
What you need
- Butter: Adding butter will give you cookies a delicious flavor, while adding a flaky texture. Adding butter can also help with the structure and rise.
- All Purpose flour: Any all purpose flour will do. I prefer to use organic flours in all my baking.
- Baking Powder: This will help your cookies rise. Baking powder gives that quick rise from a chemical reaction.
- Baking Soda: Similar to baking powder, baking soda is activated by moisture and acid to can lead to a crispier edge when baking.
- Salt: You can’t have a delicious recipe of anything without salt! I recommend a course sea salt or Kosher salt over table salt, as they will have a better taste.
- Eggs: Eggs add the richness and moisture of your cookies, and help give it a smoother texture.
- Honey: I recommend a local organic honey. This will give your cookies that sweetness without the processed sugar. If you cannot use honey, you can substitute agave or maple syrup.
- Vanilla: Need I say more? Vanilla gives your cookies that unmistakable sweetness and flavor.
- Cinnamon: Cinnamon has incredible benefits beyond just tasting amazing. It is high in antioxidants, it has anti-inflammatory properties, it can improve gut health, improve dental hygiene, and reduce cholesterol.
- Raisins: Naturally sweet, raisins add a great balance to the honey to make these cookies a healthier alternative to the store bought brands. They are very calorie dense and high in sugar, but can actually be beneficial to your health when eaten in moderation. “A cookie a day keeps the doctor away!”
Let’s get baking
In your mixer with the whisk attachment, beat together butter and honey.
Add eggs and vanilla and beat until combined.
Add in your dry ingredients and mix until well combined.
Add in the raisins and mix well.
Preheat your oven to 375 degrees.
Line two cookie sheets with parchment paper. Grab about a spoonful of dough, roll it into a ball in your hands, and place it on your cookie sheet.
Press down on the ball of dough with your fingers or the back of the spoon to create a flat, round cookie.
Fill both cookie sheets. These cookies do not expand too much, so you can place them pretty close together.
Bake on sheet at a time for 8-10 minutes. Careful not to over bake as the cookies will come out dry.
You can set your cookies to cool on a cooling rack, but I transfer them onto a paper towel. While one batch is cooling, you can bake the other cookie sheet. You can use the sheets as many times as you need to bake the whole batch of cookies.
If you are super impatient like me, you can grab one while they are still a little warm. Otherwise, let them cool and enjoy!
These cookies are amazing. Whether you eat one as a healthier way to satisfy your after dinner sweet tooth, enjoy one with your morning coffee, send them off in school lunches, or just grab one for an afternoon pick me up, these are sure to become a regular request.
