Cinnamon Raisin Cookies

Equipment

  • 1 Stand mixer
  • 1 whisk attachment
  • 1 flat beater attachment
  • 2 Cookie sheets
  • parchment paper
  • cup measures
  • spoon measures

Ingredients  

  • 1 cup softened butter
  • 1/2 cup honey
  • 2 tsp vanilla
  • 2 eggs
  • 3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp cinnamon
  • 1 cup raisins

Instructions 

  • In your mixer with your whisk attachment, cream together butter and honey.
  • Beat in your eggs and vanilla.
  • Switch to the flat beater attachment and add in the dry ingredients.
  • Mix until well combined.
  • Add in the raisins and mix well.
  • Preheat oven to 375 degrees.
  • Line two cookie sheets with parchment paper.
  • Spoon dough out onto cookie sheet a spoonful at a time.
  • Gently press the dough down to create a flat, round cookie.
  • Bake one sheet at a time for about 8-10 minutes.
  • Transfer cookies to cooling rack or place on paper towels to cool.
  • While one batch cools, you can bake the other sheet. You can reuse each sheet as many times as you need.
