Cilantro Chimichurri

Equipment

  • Food processor

Ingredients  

  • 1/4 bunch cilantro
  • 1 stalk green onion (greens only)
  • 2 cloves garlic
  • 1/8 cup pepitas
  • 1 tbsp dried oregano
  • 1/4 cup olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp crushed red pepper
  • 1 tsp onion powder

Instructions 

  • Add cilantro, green onion, garlic, pepitas, oregano, crushed red pepper and onion powder to the food processor, along with half of the olive oil. Blend until finely chopped.
  • Remove from food processor to a bowl, then add remaining olive oil, red wine vinegar and stir until loosely mixed
  • Add salt and pepper to taste
